Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter softened
  • 1 cup coconut milk or regular milk if preferred
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup shredded sweetened coconut plus extra for topping, if desired

For the Coconut Frosting:

  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • ¼ cup coconut milk
  • ½ cup shredded coconut

Instructions

Step 1: Prepare the Oven and Cake Pan

  • Preheat the oven to 350°F (175°C).
  • Grease and flour an 11 x 7-inch baking pan, or line it with parchment paper for easy removal.

Step 2: Mix the Dry Ingredients

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3: Combine Wet Ingredients

  • Add the softened butter, coconut milk, eggs, and vanilla extract to the dry ingredients.
  • Using an electric mixer on medium speed, mix for about 2 minutes until well combined and smooth.

Step 4: Fold in the Coconut

  • Gently fold in the shredded coconut using a spatula or wooden spoon until evenly distributed in the batter.

Step 5: Bake the Cake

  • Pour the batter evenly into the prepared cake pan.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Step 6: Make the Coconut Frosting

  • In a mixing bowl, beat the softened butter until creamy.
  • Gradually add the powdered sugar, mixing well after each addition.
  • Add the coconut milk and beat until the frosting is light and fluffy.
  • Fold in the shredded coconut, reserving some for sprinkling on top.

Step 7: Assemble the Cake

  • Once the cake is completely cool, place it on a serving plate.
  • Spread an even layer of frosting over the top.
  • If desired, frost the sides of the cake for a full coverage look.
  • Sprinkle additional shredded coconut over the top and sides for a decorative finish.

Step 8: Serve and Enjoy

  • Slice the cake and enjoy its light, fluffy texture and rich coconut flavor.
  • For an extra treat, serve with a scoop of vanilla ice cream or a drizzle of caramel sauce.
