- 3-5 lb roast chuck or whatever is on sale
- 1 large onion diced
- 4 large carrots, peeled and diced
- 4 large celery stalks, diced
- 2 Lipton dry onion soup mix
- 1 cup beef broth or water
How To Make Pioneer Woman Pot Roast
- Place your celery, onions, and carrots in the bottom of a slow cooker.
- Top your veggies with Lipton Onion soup mix.
- Next, pour the beef broth over the top of your veggies.
- Next, place your roast on top.
- Slow cook on low for 6-8 hours until your roast is cooked through and tender.
- Using two forks or a Mix N Chop, shred the roast.
- Serve over mashed potatoes or with buttered bread!
Variations
- Try a different cut of meat; use bison, lamb, or whatever else your butcher recommends.
- Use a variety of dried spices, garlic powder, onion powder, paprika, or whatever you have on hand. Try all Cajun spices for a spicier roast or use Italian spices for a milder flavor.
- Change up the veggies and add parsnips, zucchini or potatoes. Fresh or frozen vegetables will both work.
- Instead of beef broth use chicken or vegetables.
- Pour in some red wine.
Tips and Tricks
- Lightly spray the inside of the crockpot with cooking spray so you have an easier time cleaning it out.
- Invest in a meat thermometer so you can accurately tell if the pot roast is cooked. It should be 145F.
