  • 18.3 oz box Fudge Brownie Mix (you can use Betty Crocker, Ghirardelli brownie mix, or my favorite Duncan Hines Brownie Mix)
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup chocolate chips (I like Ghirardelli dark chocolate chips)

How To Make Cake Brownie Mix Cookies

Servings: Makes 24 cookies

Prep time: 10 minutes

Cook time: 10 minutes

Cool time: 10 minutes

  • Preheat the oven to 350 degrees Fahrenheit.
  • Line a baking sheet with parchment paper to help make cleanup easier. If you don’t have parchment paper you can add butter or non-stick spray to a regular baking sheet.
  • Add the boxed brownie mix, vegetable oil, and eggs to a large bowl.

  • Stir until a soft dough forms.
  • Stir in the chocolate chips. I like the Ghiradelli brand dark chocolate.

  • Use a medium cookie scoop to drop 1-1/2″ thick brownie batter cookie dough balls onto a prepared baking sheet about 2″ apart.

Pro Tip: For an extra chocolate kick, pop a few more chocolate chips on top before baking.

  • Bake for about 10 minutes and check, if they aren’t set up, add a minute or two and keep an eye on them.
  • Remove from the oven and set the cookie sheet on a wire cooling rack for 10 minutes, then transfer cookies to the cooling rack using a cookie spatula.

  • Change up the chocolate chips by adding peanut butter chips, white chocolate chips, mint chocolate chips, butterscotch chips, chocolate chunks, Bailey’s chips or any other kind of baking chips.
  • Dust the cookies with confectioner’s sugar or brush with glaze.
  • Add sour cherries for a tart and chewy texture.
  • Use the cookies to make vanilla ice cream sandwiches like these. Choose your favorite ice cream and place it between two cookies and freeze. Voila! Ice cream sandwich!

  • Use a mild flavored oil like canola or grapeseed to make these brownie mix cookies. Or if you’d like to use coconut oil that would work well too though you may have a slight coconut flavor.

    These are super easy and super yummy! I did add 1/4c flour as one of the other comments suggested and they came out perfectly. I also refrigerated half the batch to see how that turned out…. DON’T DO IT… it makes the cookies dry in the middle and burns the edges because you can’t tell if they’re done cooking or not (I guess you can try it if you watch them like a hawk.) Anyways, 10/10 will be recommending this recipe to all family and friends!

  6. I made these yesterday and mine look like mini flying saucers! They really spread and are flat BUT while they may not look great, they are SO chewy and chocolatey!!! VERY good. I’ll try chilling the dough before baking next time to see if it does help the spreading.
