Easy Chocolate Covered Marshmallows for Halloween
Chocolate covered marshmallows are not only a fun-to-make treat but they are also fun-to-eat. Chewy, sticky marshmallows covered in a rich, sweet white chocolate coating are perfect for Halloween or any time of year really. They look great, are easily customized and are the ideal treat to get the kids involved with.
Using white chocolate allows you to add color to make a variety of different spooky Halloween-themed pops; green for Frankenstein, orange for Jack-o-lanterns or purple for Dracula. Or keep them white and make ghosts or mummies.

Ingredients Needed To Make Marshmallow Pops
- 10-12 oz white chocolate
- Coconut oil
- Green, orange, and purple oil-based food coloring
- Chocolate buttercream frosting
- White buttercream frosting
- 20-25 marshmallows
- 1 cup chocolate chips
- Paper straws
- Decorator sugar eyes – optional
How To Make Chocolate Covered Marshmallows
- Cut the straws in half.
- Place one marshmallow on the cut end of each straw and set aside.
- Melt the white chocolate 2 oz. at a time with ¼ teaspoon of coconut oil and stir until smooth.
- If using color, add it now and stir until well incorporated.
- Dip the marshmallows into the chocolate and place them on a wax paper-lined tray.
- Cool in the fridge or freezer until set then decorate accordingly.
- Ghost – dip in white chocolate, set, then use the chocolate buttercream to pipe on eyes and mouth.
- Mummy – dip in white chocolate, set, place remaining melted chocolate in a piping bag with a tiny cut tip and drizzle it over the coated marshmallow.
- Add decorator eyes or use the frosting to create eyes.
- Frankenstein – dip in green chocolate, set, use chocolate frosting to pipe on hair, stitches, and mouth

If you want to make this recipe vegan you can purchase vegan marshmallows. Most health food stores carry them. Make sure to read the label of the other ingredients to make sure they don’t contain any animal-based ingredients. As far as the buttercream frosting is concerned it is possible to make them non-dairy. It should also be possible to find vegan white chocolate.
How do you melt the chocolate in this recipe?
To melt the chocolate you can place the chocolate in a microwave-safe bowl and heat in the microwave or you can place the chocolate in a small bowl and set it over a pot of hot water. This is also called a bain-marie.
Do I have to use coconut oil?
The coconut oil in this recipe is used to thin out the chocolate so it doesn’t really matter what kind of oil you use. I suggest you choose a mild flavored oil like canola or grapeseed if you don’t have coconut oil on hand. Though coconut oil is great to have in your pantry for instances like this as it is solid at room temperature and great for thickening chocolate.
