With yummy coffee cake chunks and melted icing these treats taste like something you may have purchased at a bakery or certain mall shop!

Ingredients Needed for Coffee Cake Cookies Recipe
- 2 sticks of butter, melted
- 3 cups of all-purpose flour
- ½ teaspoon of baking soda
- ½ teaspoon of baking powder
- 1 cup of sugar
- ¾ c of brown sugar
- 1 large egg + 1 egg yolk
- 1 tablespoon of vanilla
- 1 tablespoon of cinnamon
- A pinch of salt
Ingredients for Icing Topping
- 1 tablespoon of milk or heavy cream
- 1 teaspoon of maple extract
- 1 teaspoon of vanilla extract
- 1 ½ c of powdered sugar
How to Make the Cookie Streusel Topping
- ½ stick of melted butter
- ½ cup of white sugar
- ½ cup of packed brown sugar
- 1 egg white
- 1 tablespoon of cinnamon
How to Make Coffee Cake Cookies Recipe
Here is the recipe so you can make your own coffee cake cookies.
Combine melted butter, egg, vanilla, white sugar, and brown sugar in a large mixing bowl. Blend together until everything is well combined.
Add baking soda, baking powder, and cinnamon and mix.
Begin adding half of the flour and salt and blending.
At this point, I like to stop using a hand mixer and switch to a mixing spoon, as the dough gets thick and has a tendency to clump on the beaters. Stir in the remaining flour.
Stick the dough into the freezer for 10 minutes to allow it to cool and rest.
While the dough is chilling, preheat the oven to 375.
In a small mixing bowl add all of the streusel topping ingredients and stir them up.
Pull the dough out of the freezer and form small balls of dough with a cookie scoop.
Drop the balls into the streusel mix and roll them around, coating the entire ball.
Place the coated balls 3” apart on a cookie sheet that has been lightly sprayed with cooking spray or lined with parchment paper.
Bake for 15 minutes.
Allow to cool.
How to Make Icing Topping
While the cookies are cooling (about 15 minutes) in a small bowl combine all of the ingredients for the icing. Mix until smooth. You can add more heavy cream if needed to thin out the icing.
Drizzle this over the cookies when they are cool.
