If you are getting bored of the same old chicken recipes then I’ve got just the solution for you. This creamy avocado, cream cheese, and feta stuffed chicken is perfect for a busy weeknight dinner, or dress it up and serve it at your next dinner party.
You can make this avocado chicken ahead of time and store it in the fridge until you are ready to serve it. Avocado does tend to get brown once it is exposed to the air though it may not look as appetizing but it will still taste yummy. Leftovers are great for lunch the next day, serve warm or straight from the fridge. I like to add it to a salad but you can eat it on its own too. It’s chock full of protein and healthy fats.

Variations
- Add diced sundried tomatoes to the avocado feta mixture.
- Change up the cheese and use parmesan or cheddar instead of feta.
- Throw in additional spices whether it be a Mexican blend with cumin or an Italian blend with basil and oregano.
- Chop up some black or green olives and add them to the avocado cream cheese mixture.
- Marinate the chicken breasts before you roll them. I find a nice balsamic or Italian salad dressing always does the trick to enhance the flavor.
- Mix in some fresh herbs for more color and flavor. I especially like cilantro with avocados but parsley will also work.
- Instead of bacon, you can use diced ham. Or use store-bought bacon bits instead of cooked bacon.
- Sprinkle the chicken with breadcrumbs before baking. Any kind of breadcrumbs will work; panko, Italian breadcrumbs, or plain will all work well and add some texture.
- Try flavored cream cheese instead of plain and use chive or garlic and onion flavored cream cheese. Just make sure not to get any of the sweet or fruit-flavored cream cheese.
Tips and Tricks
- If you have a hard time rolling the chicken breasts you can use a few toothpicks to keep them from opening. Just remember to remove them before serving the chicken.
- Pick up the avocados a few days before you want to prepare this dish as they take a few days to ripen. Unripe avocados will be hard and tasteless so it is important to use just ripe ones.
- Use full-fat cream cheese for a rich taste. Low-fat cream cheese will also work but you may not get the same rich texture or creamy taste.
